SPUMANTE METODO CLASSICO"FRANCESCA POGGIO" 2014
The Metodo Classico named after me is conceived to rediscover the value of the passing of time. Golden yellow in colour, it has a very fine perlage. The bouquet tells stories of full maturity wrapped in fragrances of quince, saffron and intriguing notes of toasted biscuit. The palate is soft, buttery, spicy and persistent. It is savoury and complex with superior persistence characterised by ripe fruit.
Great with cured meats, it becomes regal with culatello. Ideal with shellfish and molluscs, it enhances fried fish and vegetables but is also excellent with oysters and raw fish. Delicious with fatty foods, it is perfect with saffron risotto, tagliolini with truffle, pâté de foie gras, grilled veal and Ligurian-style white rabbit. Surprising with buffalo mozzarella, mature Parmesan, Robiola di Roccaverano and medium-mature cheeses.
